Ferryside Fisherman's Pie

Ingredients
- 500g white fish fillets, such as cod or haddock
- 300g cooked and peeled prawns
- 1 onion, finely chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 200ml fish stock
- 200ml double cream
- 1 tbsp chopped fresh parsley
- 1 kg potatoes, peeled and cut into chunks
- 50g butter
- 50ml milk
- Salt and pepper to taste
Instructions
- Preheat the oven to 180°C (350°F).
- Place the fish fillets in a baking dish and season with salt and pepper. Bake for 15 minutes, or until the fish is cooked through. Remove from the oven and flake the fish into bite-sized pieces.
- In a large pan, sauté the onion, carrots, and celery until softened. Add the fish stock and double cream, then bring to a simmer.
- Add the flaked fish and prawns to the pan, then stir in the chopped parsley. Season with salt and pepper to taste.
- Meanwhile, boil the potatoes in a large pot of salted water until tender. Drain the potatoes and mash them with butter and milk until smooth.
- Spread the fish and prawn mixture evenly in a baking dish. Top with the mashed potatoes, using a fork to create a decorative pattern on the surface.
- Bake the pie in the preheated oven for 25 minutes, or until the top is golden and the filling is bubbling.
