Fiery Chili Garlic Chicken (辣椒蒜香鸡)

Ingredients
- 4 boneless, skinless chicken breasts, cut into bite-sized pieces
- 3 tablespoons soy sauce
- 2 tablespoons rice wine or dry sherry
- 2 tablespoons cornstarch
- 3 tablespoons vegetable oil
- 6-8 dried red chilies, deseeded and cut into small pieces
- 5 cloves garlic, minced
- 1 tablespoon sugar
- 1 teaspoon sesame oil
- Salt to taste
Instructions
- In a bowl, mix the soy sauce, rice wine, and cornstarch. Add the chicken pieces and marinate for 10 minutes.
- Heat the vegetable oil in a wok or large skillet over high heat. Add the marinated chicken and stir-fry until golden brown and cooked through. Remove the chicken from the wok and set aside.
- In the same wok, add the dried red chilies and garlic. Stir-fry until fragrant, about 1-2 minutes.
- Return the cooked chicken to the wok. Add sugar, sesame oil, and salt. Stir-fry for another 2-3 minutes until the chicken is well coated with the chili garlic mixture.
- Transfer the fiery chili garlic chicken to a serving dish and garnish with sliced green onions, if desired.
