Ingredients
- 1 pound large shrimp, peeled and deveined
- 3 tablespoons vegetable oil
- 3-4 dried red chilies, deseeded and cut into small pieces
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 green onions, chopped
- 1 tablespoon Shaoxing wine (or dry sherry)
- 1 tablespoon soy sauce
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1/4 cup water
- 1 teaspoon cornstarch mixed with 2 teaspoons water (slurry)
Instructions
- Heat the vegetable oil in a wok or large skillet over high heat.
- Add the dried red chilies, garlic, and ginger. Stir-fry for about 30 seconds until fragrant.
- Add the shrimp and stir-fry for 2-3 minutes until they turn pink and opaque.
- Pour in the Shaoxing wine, soy sauce, sugar, and salt. Stir to combine.
- Add the water and bring to a boil. Then, stir in the cornstarch slurry to thicken the sauce.
- Sprinkle with green onions and stir to combine.
- Transfer to a serving dish and serve hot.
