Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons vegetable oil
  • 3-4 dried red chilies, deseeded and cut into small pieces
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 green onions, chopped
  • 1 tablespoon Shaoxing wine (or dry sherry)
  • 1 tablespoon soy sauce
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/4 cup water
  • 1 teaspoon cornstarch mixed with 2 teaspoons water (slurry)

Instructions

  1. Heat the vegetable oil in a wok or large skillet over high heat.
  2. Add the dried red chilies, garlic, and ginger. Stir-fry for about 30 seconds until fragrant.
  3. Add the shrimp and stir-fry for 2-3 minutes until they turn pink and opaque.
  4. Pour in the Shaoxing wine, soy sauce, sugar, and salt. Stir to combine.
  5. Add the water and bring to a boil. Then, stir in the cornstarch slurry to thicken the sauce.
  6. Sprinkle with green onions and stir to combine.
  7. Transfer to a serving dish and serve hot.
