Fiery Dragon Stir-Fry (火龙炒)

Ingredients

  • 1 lb (450g) chicken breast, thinly sliced
  • 2 tbsp vegetable oil
  • 3-4 dried red chilies, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, julienned
  • 1 bell pepper, sliced
  • 2 green onions, chopped
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp ground white pepper
  • 1/4 cup chicken broth
  • 1 tsp cornstarch

Instructions

  1. Heat vegetable oil in a wok over high heat. Add the dried red chilies and stir-fry for 30 seconds.
  2. Add the minced garlic and julienned ginger, and stir-fry for another 30 seconds until fragrant.
  3. Add the sliced chicken breast and stir-fry until it is no longer pink.
  4. Add the bell pepper and green onions, and continue to stir-fry for 2-3 minutes.
  5. In a small bowl, mix together the soy sauce, oyster sauce, sugar, salt, and white pepper.
  6. Pour the sauce mixture into the wok and stir to coat the ingredients.
  7. In another small bowl, mix the chicken broth and cornstarch, then pour it into the wok. Stir until the sauce thickens.
  8. Transfer the fiery dragon stir-fry to a serving dish and serve hot with steamed rice.
