Fiery Dragon Stir-Fry (火龙炒)

Ingredients
- 1 lb (450g) chicken breast, thinly sliced
- 2 tbsp vegetable oil
- 3-4 dried red chilies, chopped
- 3 cloves garlic, minced
- 1 inch ginger, julienned
- 1 bell pepper, sliced
- 2 green onions, chopped
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sugar
- 1/2 tsp salt
- 1/4 tsp ground white pepper
- 1/4 cup chicken broth
- 1 tsp cornstarch
Instructions
- Heat vegetable oil in a wok over high heat. Add the dried red chilies and stir-fry for 30 seconds.
- Add the minced garlic and julienned ginger, and stir-fry for another 30 seconds until fragrant.
- Add the sliced chicken breast and stir-fry until it is no longer pink.
- Add the bell pepper and green onions, and continue to stir-fry for 2-3 minutes.
- In a small bowl, mix together the soy sauce, oyster sauce, sugar, salt, and white pepper.
- Pour the sauce mixture into the wok and stir to coat the ingredients.
- In another small bowl, mix the chicken broth and cornstarch, then pour it into the wok. Stir until the sauce thickens.
- Transfer the fiery dragon stir-fry to a serving dish and serve hot with steamed rice.
