Fiery Dragon's Breath Chicken (火龙呼吸鸡)

Ingredients
- 4 boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons Sichuan peppercorns
- 4-6 dried red chili peppers, chopped
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 green onions, chopped
- 3 tablespoons soy sauce
- 2 tablespoons Chinese black vinegar
- 1 tablespoon sugar
- 2 tablespoons vegetable oil
- 1 teaspoon cornstarch
- Salt to taste
Instructions
- In a small bowl, mix together the soy sauce, Chinese black vinegar, sugar, and cornstarch. Set aside.
- Heat the vegetable oil in a wok or large skillet over high heat. Add the Sichuan peppercorns and dried red chili peppers. Stir-fry for 1-2 minutes until fragrant.
- Add the chicken pieces to the wok and stir-fry for 5-6 minutes until cooked through.
- Push the chicken to the side of the wok and add the garlic, ginger, and green onions. Stir-fry for 1-2 minutes.
- Pour the soy sauce mixture over the chicken and stir to coat evenly. Cook for an additional 2-3 minutes until the sauce thickens.
- Season with salt to taste and serve hot.
