麻辣豆腐炒 (Fiery Mapo Tofu Stir-Fry) is a classic Sichuan dish known for its bold and spicy flavors. This dish combines the numbing heat of Sichuan peppercorns with the fiery kick of chili peppers, creating a mouthwatering experience for spice lovers.
Ingredients
- 1 block (14 oz) firm tofu, cut into cubes
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- 1-inch piece ginger, minced
- 2 green onions, chopped
- 1/4 cup Sichuan peppercorns
- 1/4 cup chili bean paste
- 1 cup vegetable broth
- 2 tbsp soy sauce
- 1 tsp sugar
- 1 tsp cornstarch
- 1/4 cup water
Instructions
- Heat vegetable oil in a wok over medium heat.
- Add garlic, ginger, and green onions. Stir-fry for 1-2 minutes until fragrant.
- Add Sichuan peppercorns and chili bean paste. Stir-fry for another minute.
- Add tofu cubes and gently stir to coat with the spicy mixture.
- Pour in vegetable broth, soy sauce, and sugar. Simmer for 5 minutes.
- In a small bowl, mix cornstarch and water to create a slurry. Pour the slurry into the wok and stir gently to thicken the sauce.
- Simmer for an additional 2-3 minutes until the sauce has thickened.
- Remove from heat and serve hot with steamed rice.
