Fiery Mapo Tofu Stir-Fry (麻辣豆腐炒)

Ingredients

  • 1 block (14 oz) firm tofu, cut into cubes
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 2 green onions, chopped
  • 1/4 cup Sichuan peppercorns
  • 1/4 cup chili bean paste
  • 1 cup vegetable broth
  • 2 tbsp soy sauce
  • 1 tsp sugar
  • 1 tsp cornstarch
  • 1/4 cup water

Instructions

  1. Heat vegetable oil in a wok over medium heat.
  2. Add garlic, ginger, and green onions. Stir-fry for 1-2 minutes until fragrant.
  3. Add Sichuan peppercorns and chili bean paste. Stir-fry for another minute.
  4. Add tofu cubes and gently stir to coat with the spicy mixture.
  5. Pour in vegetable broth, soy sauce, and sugar. Simmer for 5 minutes.
  6. In a small bowl, mix cornstarch and water to create a slurry. Pour the slurry into the wok and stir gently to thicken the sauce.
  7. Simmer for an additional 2-3 minutes until the sauce has thickened.
  8. Remove from heat and serve hot with steamed rice.
