Fiery Sichuan Style Green Bean Stir-Fry (四川辣干煸豆角炒)
This fiery Sichuan style green bean stir-fry, known as 四川辣干煸豆角炒 (Sìchuān Là Gān Biān Dòu Jiǎo Chǎo), is a classic dish in Sichuan cuisine. The green beans are stir-fried until blistered and then tossed in a spicy, savory sauce, creating a deliciously addictive dish that pairs perfectly with steamed rice.
Ingredients
- 1 lb green beans, ends trimmed
- 3 tbsp vegetable oil
- 3 cloves garlic, minced
- 2 tbsp Sichuan peppercorns
- 2 tbsp doubanjiang (broad bean paste)
- 1 tbsp soy sauce
- 1 tsp sugar
- 1/2 tsp salt
- 1/4 cup water
Instructions
- Blanch the green beans in boiling water for 2 minutes, then drain and set aside.
- Heat the vegetable oil in a wok over high heat. Add the blanched green beans and stir-fry for 5-6 minutes until blistered and slightly charred. Remove the green beans from the wok and set aside.
- In the same wok, add a bit more oil if needed and stir-fry the garlic and Sichuan peppercorns until fragrant.
- Add the doubanjiang, soy sauce, sugar, salt, and water to the wok, stirring to combine.
- Return the green beans to the wok and toss to coat in the sauce. Cook for an additional 2-3 minutes.
- Transfer the green beans to a serving dish and serve hot.
