Fiery Sichuan Style Green Bean Stir-Fry (四川辣干煸豆角炒)

Ingredients

  • 1 lb green beans, ends trimmed
  • 3 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 2 tbsp Sichuan peppercorns
  • 2 tbsp doubanjiang (broad bean paste)
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 cup water

Instructions

  1. Blanch the green beans in boiling water for 2 minutes, then drain and set aside.
  2. Heat the vegetable oil in a wok over high heat. Add the blanched green beans and stir-fry for 5-6 minutes until blistered and slightly charred. Remove the green beans from the wok and set aside.
  3. In the same wok, add a bit more oil if needed and stir-fry the garlic and Sichuan peppercorns until fragrant.
  4. Add the doubanjiang, soy sauce, sugar, salt, and water to the wok, stirring to combine.
  5. Return the green beans to the wok and toss to coat in the sauce. Cook for an additional 2-3 minutes.
  6. Transfer the green beans to a serving dish and serve hot.
