Fiesta De Arepas (arepa Fiesta)

Ingredients

  • 2 cups pre-cooked white cornmeal
  • 2 1/2 cups warm water
  • 1 tsp salt
  • 1 cup shredded mozzarella cheese
  • 1 cup black beans, cooked and mashed
  • 1 avocado, sliced
  • 1 cup shredded chicken
  • 1 cup pico de gallo
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro

Instructions

  1. In a large bowl, mix the pre-cooked white cornmeal, warm water, and salt until you have a smooth dough.
  2. Divide the dough into 6 equal parts and shape them into thick discs.
  3. Heat a non-stick pan over medium heat and cook the arepas for about 5 minutes on each side, or until they are golden brown.
  4. Once the arepas are cooked, slice them open to create a pocket for the fillings.
  5. Fill each arepa with a combination of mozzarella cheese, black beans, avocado, shredded chicken, pico de gallo, sour cream, and chopped cilantro.
