Ingredients
- 2 cups pre-cooked white cornmeal
- 2 1/2 cups warm water
- 1 tsp salt
- 1 cup shredded mozzarella cheese
- 1 cup black beans, cooked and mashed
- 1 avocado, sliced
- 1 cup shredded chicken
- 1 cup pico de gallo
- 1/2 cup sour cream
- 1/4 cup chopped cilantro
Instructions
- In a large bowl, mix the pre-cooked white cornmeal, warm water, and salt until you have a smooth dough.
- Divide the dough into 6 equal parts and shape them into thick discs.
- Heat a non-stick pan over medium heat and cook the arepas for about 5 minutes on each side, or until they are golden brown.
- Once the arepas are cooked, slice them open to create a pocket for the fillings.
- Fill each arepa with a combination of mozzarella cheese, black beans, avocado, shredded chicken, pico de gallo, sour cream, and chopped cilantro.
