Ingredients

  • 2 green plantains, peeled and sliced
  • Vegetable oil for frying
  • Salt to taste
  • 1 cup shredded chicken
  • 1 cup guacamole
  • 1/2 cup diced tomatoes
  • 1/2 cup diced onions
  • 1/4 cup chopped cilantro
  • 1/2 cup crumbled queso fresco
  • 1/4 cup sour cream
  • 1/4 cup hot sauce

Instructions

  1. Heat vegetable oil in a large skillet over medium heat.
  2. Fry the plantain slices until golden brown, about 3 minutes per side. Remove and drain on paper towels. Flatten the fried plantain slices with a plantain press or the bottom of a heavy glass.
  3. Return the flattened plantains to the hot oil and fry until crispy, about 2 minutes per side. Drain on paper towels and sprinkle with salt.
  4. Top the crispy plantains with shredded chicken, guacamole, diced tomatoes, onions, cilantro, queso fresco, sour cream, and hot sauce.
