Fiesta de Pernil (Pernil Party) is a traditional Puerto Rican dish that is perfect for a festive gathering. This slow-roasted pork shoulder is marinated in a flavorful blend of spices, creating a tender and juicy centerpiece for any celebration.
Ingredients
- 1 (6-8 pound) pork shoulder, bone-in
- 10 garlic cloves, minced
- 1 tablespoon dried oregano
- 1 tablespoon ground cumin
- 1 tablespoon paprika
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1/2 cup orange juice
- 1/4 cup white vinegar
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 300°F (150°C).
- In a small bowl, mix together the garlic, oregano, cumin, paprika, salt, pepper, orange juice, vinegar, and olive oil to create the marinade.
- Using a sharp knife, score the pork shoulder with deep cuts.
- Rub the marinade all over the pork, making sure to get it into the cuts.
- Place the pork shoulder in a roasting pan and cover it with aluminum foil.
- Roast the pork in the preheated oven for 6 hours, or until the meat is tender and easily pulls apart with a fork.
- Once cooked, remove the foil and increase the oven temperature to 400°F (200°C). Roast for an additional 30 minutes to crisp up the skin.
- Remove the pork from the oven and let it rest for 15 minutes before shredding the meat with two forks.
- Serve the pernil with your favorite sides and enjoy!
