Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 small red onion, diced
  • 1 cup corn kernels
  • 1 cup black beans, drained and rinsed
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped
  • Lime wedges for serving

Instructions

  1. Rinse the quinoa under cold water using a fine mesh strainer.
  2. In a medium saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until all the water is absorbed.
  3. While the quinoa is cooking, heat the olive oil in a large skillet over medium heat. Add the bell peppers, onion, corn, and black beans. Cook for 5-7 minutes, or until the vegetables are tender.
  4. Stir in the cooked quinoa, cumin, chili powder, salt, and pepper. Cook for an additional 2-3 minutes, stirring occasionally.
  5. Remove from heat and stir in the chopped cilantro.
  6. Serve the Fiesta de Quinoa with lime wedges on the side for squeezing over the dish.
