Ingredients
- 1 cup quinoa
- 2 cups water
- 1 tablespoon olive oil
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 small red onion, diced
- 1 cup corn kernels
- 1 cup black beans, drained and rinsed
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1/4 cup fresh cilantro, chopped
- Lime wedges for serving
Instructions
- Rinse the quinoa under cold water using a fine mesh strainer.
- In a medium saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until all the water is absorbed.
- While the quinoa is cooking, heat the olive oil in a large skillet over medium heat. Add the bell peppers, onion, corn, and black beans. Cook for 5-7 minutes, or until the vegetables are tender.
- Stir in the cooked quinoa, cumin, chili powder, salt, and pepper. Cook for an additional 2-3 minutes, stirring occasionally.
- Remove from heat and stir in the chopped cilantro.
- Serve the Fiesta de Quinoa with lime wedges on the side for squeezing over the dish.
