Fiesta De Ropa Vieja (ropa Vieja Fiesta)

Ingredients

  • 2 lbs flank steak
  • 1 onion, sliced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 3 garlic cloves, minced
  • 1 can (14 oz) crushed tomatoes
  • 1 cup beef broth
  • 1/4 cup tomato paste
  • 1/4 cup pimento-stuffed olives
  • 2 bay leaves
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • 3 tbsp olive oil
  • 2 tbsp white vinegar
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Season the flank steak with salt, pepper, and white vinegar. Let it marinate for 30 minutes.
  2. In a large pot, heat the olive oil over medium-high heat. Add the flank steak and sear on both sides until browned. Remove the steak and set aside.
  3. In the same pot, add the onions, bell peppers, and garlic. Cook until the vegetables are softened.
  4. Stir in the crushed tomatoes, beef broth, tomato paste, olives, bay leaves, cumin, oregano, and the seared flank steak.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the meat is tender and shreds easily with a fork.
  6. Once the meat is tender, remove it from the pot and shred it using two forks. Return the shredded meat to the pot and stir to combine with the sauce.
  7. Adjust the seasoning with salt and pepper, if needed. Stir in the chopped cilantro before serving.
