Fiesta De Ropa Vieja (ropa Vieja Fiesta)

Ingredients
- 2 lbs flank steak
- 1 onion, sliced
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 3 garlic cloves, minced
- 1 can (14 oz) crushed tomatoes
- 1 cup beef broth
- 1/4 cup tomato paste
- 1/4 cup pimento-stuffed olives
- 2 bay leaves
- 1 tsp cumin
- 1 tsp oregano
- Salt and pepper to taste
- 3 tbsp olive oil
- 2 tbsp white vinegar
- 1/4 cup chopped fresh cilantro
Instructions
- Season the flank steak with salt, pepper, and white vinegar. Let it marinate for 30 minutes.
- In a large pot, heat the olive oil over medium-high heat. Add the flank steak and sear on both sides until browned. Remove the steak and set aside.
- In the same pot, add the onions, bell peppers, and garlic. Cook until the vegetables are softened.
- Stir in the crushed tomatoes, beef broth, tomato paste, olives, bay leaves, cumin, oregano, and the seared flank steak.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the meat is tender and shreds easily with a fork.
- Once the meat is tender, remove it from the pot and shred it using two forks. Return the shredded meat to the pot and stir to combine with the sauce.
- Adjust the seasoning with salt and pepper, if needed. Stir in the chopped cilantro before serving.
