Fijian Chicken And Vegetable Curry

Ingredients

  • 1.5 lbs chicken, cut into pieces

  • 1-inch piece of ginger, grated
  • 1 can (14 oz) coconut milk
  • 2 tbsp curry powder
  • 1 tsp turmeric

  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions
