Fijian-style Bbq Prawns

Ingredients

  • 1 kg fresh prawns, peeled and deveined
  • 1/4 cup coconut milk
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together coconut milk, soy sauce, brown sugar, garlic, ginger, paprika, cumin, coriander, cayenne pepper, salt, and pepper.
  2. Add the prawns to the marinade and toss to coat. Cover and refrigerate for 1 hour.
  3. Preheat the BBQ grill to medium-high heat.
  4. Thread the marinated prawns onto skewers.
  5. Grill the prawns for 2-3 minutes per side, or until they are pink and opaque.
  6. Remove from the grill and serve hot.
