Ingredients

  • 1 lb beef, cut into cubes
  • 2 cups pumpkin, peeled and diced
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 1 can (14 oz) coconut milk
  • 2 tomatoes, chopped
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp cooking oil
  • 2 cups water

Instructions

  1. Heat the cooking oil in a large pot over medium heat. Add the onions, garlic, and ginger. Sauté until the onions are soft and translucent.
  2. Add the beef to the pot and cook until browned on all sides.
