Ingredients
- 1 lb beef, cut into cubes
- 2 cups pumpkin, peeled and diced
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 1 can (14 oz) coconut milk
- 2 tomatoes, chopped
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp cooking oil
- 2 cups water
Instructions
- Heat the cooking oil in a large pot over medium heat. Add the onions, garlic, and ginger. Sauté until the onions are soft and translucent.
- Add the beef to the pot and cook until browned on all sides.
- Stir in the curry powder, turmeric, cumin, coriander, and paprika. Cook for 2 minutes to toast the spices.
- Pour in the coconut milk and water. Bring the mixture to a simmer.
- Add the diced pumpkin and chopped tomatoes. Season with salt and pepper. Cover the pot and let it simmer for 45-50 minutes, or until the beef is tender and the pumpkin is cooked through.
