Fijian-style Beef Curry

Ingredients
- 1.5 lbs beef stew meat, cubed
- 2 tbsp vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 tbsp curry powder
- 1 tsp cumin
- 1 tsp turmeric
- 1 can (14 oz) coconut milk
- 2 cups beef broth
- 2 large potatoes, peeled and cubed
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the onions, garlic, and ginger. Cook until the onions are soft and translucent.
- Add the beef stew meat to the pot and brown on all sides.
- Stir in the curry powder, cumin, and turmeric, and cook for 2 minutes to toast the spices.
- Pour in the coconut milk and beef broth. Bring to a simmer, then cover and cook for 45 minutes.
- Add the cubed potatoes to the pot and continue to cook for an additional 15 minutes, or until the beef is tender and the potatoes are cooked through.
- Season with salt and pepper to taste.
