Fijian-style Beef Curry

Ingredients

  • 1.5 lbs beef stew meat, cubed
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tbsp curry powder
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 can (14 oz) coconut milk
  • 2 cups beef broth
  • 2 large potatoes, peeled and cubed
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onions, garlic, and ginger. Cook until the onions are soft and translucent.
  2. Add the beef stew meat to the pot and brown on all sides.
  3. Stir in the curry powder, cumin, and turmeric, and cook for 2 minutes to toast the spices.
  4. Pour in the coconut milk and beef broth. Bring to a simmer, then cover and cook for 45 minutes.
  5. Add the cubed potatoes to the pot and continue to cook for an additional 15 minutes, or until the beef is tender and the potatoes are cooked through.
  6. Season with salt and pepper to taste.
