Fijian-style Chicken And Vegetable Stir Fry
This Fijian-style Chicken and Vegetable Stir Fry is a delicious and healthy dish that combines tender chicken with a variety of colorful vegetables, all cooked in a flavorful sauce. It's a perfect meal for a quick and easy dinner.
Ingredients
- 2 boneless, skinless chicken breasts, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 1 carrot, julienned
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together soy sauce, oyster sauce, and cornstarch. Set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Add the sliced chicken and stir-fry until cooked through. Remove the chicken from the skillet and set aside.
- Heat the remaining tablespoon of vegetable oil in the same skillet. Add garlic and ginger, and stir-fry for 1-2 minutes until fragrant.
- Add the bell peppers, broccoli, snap peas, and carrot to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Return the cooked chicken to the skillet. Pour the sauce over the chicken and vegetables. Stir-fry for another 2-3 minutes until the sauce thickens and coats the chicken and vegetables.
- Season with salt and pepper to taste. Serve the Fijian-style Chicken and Vegetable Stir Fry hot over steamed rice.
