Fijian-style Chicken And Vegetable Stir Fry

Ingredients

  • 2 boneless, skinless chicken breasts, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 1 carrot, julienned
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together soy sauce, oyster sauce, and cornstarch. Set aside.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Add the sliced chicken and stir-fry until cooked through. Remove the chicken from the skillet and set aside.
  3. Heat the remaining tablespoon of vegetable oil in the same skillet. Add garlic and ginger, and stir-fry for 1-2 minutes until fragrant.
  4. Add the bell peppers, broccoli, snap peas, and carrot to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  5. Return the cooked chicken to the skillet. Pour the sauce over the chicken and vegetables. Stir-fry for another 2-3 minutes until the sauce thickens and coats the chicken and vegetables.
  6. Season with salt and pepper to taste. Serve the Fijian-style Chicken and Vegetable Stir Fry hot over steamed rice.
