Ingredients
- 1.5 lbs (680g) boneless, skinless chicken thighs
- 1/2 cup (120ml) coconut milk
- 2 tablespoons (30ml) soy sauce
- 2 tablespoons (30ml) brown sugar
- 2 cloves garlic, minced
- 1 teaspoon (5ml) ground cumin
- 1 teaspoon (5ml) ground coriander
- 1/2 teaspoon (2.5ml) turmeric
- 1/4 teaspoon (1.25ml) cayenne pepper
- Salt and pepper to taste
- 1/2 cup (120g) creamy peanut butter
- 2 tablespoons (30ml) soy sauce
- 2 tablespoons (30ml) lime juice
- 2 tablespoons (30ml) brown sugar
- 1/4 cup (60ml) water
- Skewers, soaked in water for 30 minutes
Instructions
- In a bowl, combine the coconut milk, soy sauce, brown sugar, garlic, cumin, coriander, turmeric, cayenne pepper, salt, and pepper. Add the chicken thighs and marinate for at least 1 hour, or overnight in the refrigerator.
- Preheat the grill to medium-high heat. Thread the marinated chicken onto the soaked skewers.
- Grill the chicken skewers for 5-7 minutes on each side, or until cooked through and slightly charred.
- While the chicken is grilling, prepare the peanut sauce. In a small saucepan, combine the peanut butter, soy sauce, lime juice, brown sugar, and water. Cook over low heat, stirring constantly, until the sauce is smooth and heated through.
- Serve the grilled chicken satay with the warm peanut sauce on the side.
