Ingredients

  • 1.5 lbs (680g) boneless, skinless chicken thighs
  • 1/2 cup (120ml) coconut milk
  • 2 tablespoons (30ml) soy sauce
  • 2 tablespoons (30ml) brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon (5ml) ground cumin
  • 1 teaspoon (5ml) ground coriander
  • 1/2 teaspoon (2.5ml) turmeric
  • 1/4 teaspoon (1.25ml) cayenne pepper
  • Salt and pepper to taste
  • 1/2 cup (120g) creamy peanut butter
  • 2 tablespoons (30ml) soy sauce
  • 2 tablespoons (30ml) lime juice
  • 2 tablespoons (30ml) brown sugar
  • 1/4 cup (60ml) water
  • Skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, combine the coconut milk, soy sauce, brown sugar, garlic, cumin, coriander, turmeric, cayenne pepper, salt, and pepper. Add the chicken thighs and marinate for at least 1 hour, or overnight in the refrigerator.
  2. Preheat the grill to medium-high heat. Thread the marinated chicken onto the soaked skewers.
  3. Grill the chicken skewers for 5-7 minutes on each side, or until cooked through and slightly charred.
  4. While the chicken is grilling, prepare the peanut sauce. In a small saucepan, combine the peanut butter, soy sauce, lime juice, brown sugar, and water. Cook over low heat, stirring constantly, until the sauce is smooth and heated through.
  5. Serve the grilled chicken satay with the warm peanut sauce on the side.
