Fil Fil Mahshi (emirati-style Stuffed Bell Peppers)

Ingredients

  • 4 large bell peppers
  • 1 cup long-grain rice
  • 250g ground beef or lamb
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • 2 cups chicken or beef broth
  • 2 tablespoons vegetable oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, mix the rice, ground meat, onion, tomatoes, garlic, cumin, coriander, turmeric, salt, and pepper.
  4. Stuff the bell peppers with the rice and meat mixture.
  5. Place the stuffed bell peppers in a deep pot and pour the broth over them.
  6. Cover the pot and cook on the stovetop over medium heat for 1 hour, or until the peppers are tender and the filling is cooked through.
  7. Serve the Fil Fil Mahshi hot, garnished with fresh herbs if desired.
