Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Butterfly the pork tenderloin by slicing it lengthwise, but not all the way through, and open it like a book.
  3. In a bowl, combine breadcrumbs, Parmesan cheese, garlic, parsley, pine nuts, raisins, salt, and pepper.
  4. Spoon the breadcrumb mixture onto the butterflied pork tenderloin, then roll it up and secure with kitchen twine.
