Ingredients

  • 4 large bell peppers, tops removed and seeds discarded
  • 1 cup rice, rinsed and drained
  • 1 lb ground beef
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 tbsp tomato paste
  • 1 tsp allspice
  • 1 tsp cumin
  • 1/2 tsp cinnamon
  • Salt and pepper to taste
  • 2 cups chicken or vegetable broth
  • Fresh parsley for garnish

Instructions

  1. In a large bowl, mix the rice, ground beef, onion, tomatoes, tomato paste, allspice, cumin, cinnamon, salt, and pepper.
  2. Stuff the bell peppers with the rice and beef mixture.
  3. Place the stuffed peppers in a deep pot and pour the broth over them.
  4. Cover the pot and cook over medium heat for 45 minutes, or until the peppers are tender and the filling is cooked through.
  5. Serve the Filfil Mahshi hot, garnished with fresh parsley.
