Ingredients

  • 4 large bell peppers
  • 1 pound ground lamb
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/4 cup pine nuts (optional)
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F.
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
  4. Add the ground lamb to the skillet and cook until browned, breaking it up with a spoon.
  5. Stir in the cooked rice, diced tomatoes, cumin, paprika, cinnamon, salt, and pepper. Cook for a few minutes until well combined.
  6. Stuff the bell peppers with the lamb and rice mixture and place them in a baking dish. If using pine nuts, sprinkle them on top of the stuffed peppers.
  7. Cover the baking dish with foil and bake for 45 minutes. Then, remove the foil and bake for an additional 15 minutes until the peppers are tender.
  8. Garnish with fresh parsley before serving.
