Ingredients
- 4 large bell peppers
- 1 cup long-grain white rice
- 1 lb ground beef or lamb
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- 1/2 teaspoon allspice
- Salt and pepper to taste
- 2 cups chicken or vegetable broth
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, combine the rice, ground meat, onion, tomatoes, garlic, parsley, cumin, cinnamon, allspice, salt, and pepper. Mix well.
- Stuff the bell peppers with the rice and meat mixture, and place them in a deep pot or Dutch oven.
- Pour the chicken or vegetable broth over the stuffed peppers, drizzle with olive oil, and cover the pot.
- Cook the stuffed peppers over medium heat for 45 minutes, or until the rice is fully cooked and the peppers are tender.
- Remove the stuffed peppers from the pot and serve hot.
