Ingredients

  • 4 large bell peppers
  • 1 cup long-grain white rice
  • 1 lb ground beef or lamb
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon allspice
  • Salt and pepper to taste
  • 2 cups chicken or vegetable broth
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, combine the rice, ground meat, onion, tomatoes, garlic, parsley, cumin, cinnamon, allspice, salt, and pepper. Mix well.
  4. Stuff the bell peppers with the rice and meat mixture, and place them in a deep pot or Dutch oven.
