Finnish Forest Mushroom Soup (Metsäsienikeitto)

Ingredients

  • 500g mixed wild forest mushrooms, such as chanterelles, porcini, and morels
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 1 liter vegetable or mushroom broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until softened.
  2. Add the mixed wild forest mushrooms to the pot and cook until they release their liquid and start to brown.
  3. Sprinkle the flour over the mushrooms and stir to coat evenly. Cook for a few minutes to get rid of the raw flour taste.
  4. Pour in the vegetable or mushroom broth, stirring constantly to avoid lumps. Bring the soup to a simmer and cook for 20 minutes.
  5. Stir in the heavy cream and season the soup with salt and pepper to taste. Simmer for an additional 10 minutes.
  6. Remove the soup from heat and ladle into bowls. Garnish with chopped fresh parsley before serving.
