Finnish Forest Mushroom Soup (Metsäsienikeitto)
Metsäsienikeitto, or Finnish Forest Mushroom Soup, is a comforting and flavorful dish that is popular in Northern European cuisine. This creamy soup is made with a variety of wild forest mushrooms, giving it a rich and earthy flavor.
Ingredients
- 500g mixed wild forest mushrooms, such as chanterelles, porcini, and morels
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 3 tbsp butter
- 3 tbsp all-purpose flour
- 1 liter vegetable or mushroom broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the mixed wild forest mushrooms to the pot and cook until they release their liquid and start to brown.
- Sprinkle the flour over the mushrooms and stir to coat evenly. Cook for a few minutes to get rid of the raw flour taste.
- Pour in the vegetable or mushroom broth, stirring constantly to avoid lumps. Bring the soup to a simmer and cook for 20 minutes.
- Stir in the heavy cream and season the soup with salt and pepper to taste. Simmer for an additional 10 minutes.
- Remove the soup from heat and ladle into bowls. Garnish with chopped fresh parsley before serving.
