Ingredients
- 500g potatoes, thinly sliced
- 250g mushrooms, sliced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup vegetable broth
- 1/2 cup non-dairy milk
- 2 tbsp flour
- 2 tbsp nutritional yeast
- 1 tsp thyme
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the onions and garlic, and sauté until softened.
- Add the mushrooms to the skillet and cook until they release their liquid and start to brown.
- Sprinkle the flour over the mushroom mixture and stir to combine. Cook for 1-2 minutes to remove the raw flour taste.
- Slowly pour in the vegetable broth while stirring constantly to avoid lumps. Add the non-dairy milk, nutritional yeast, and thyme. Season with salt and pepper to taste.
- Add the sliced potatoes to the skillet and stir to coat them in the mushroom mixture.
- Transfer the mixture to a baking dish and cover with foil. Bake for 45 minutes, then remove the foil and bake for an additional 15 minutes until the potatoes are tender and the top is golden brown.
- Let the dish cool for a few minutes before serving.
