Finnish Salmon Curry

Ingredients

  • 1 lb salmon fillet, cut into cubes
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 can (14 oz) coconut milk
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 2 cups cooked rice, for serving

Instructions

  1. In a large pan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  2. Add the curry powder, turmeric, cumin, paprika, salt, and black pepper to the pan. Stir well to combine with the onions and garlic.
  3. Add the salmon cubes to the pan and cook for 5 minutes, stirring occasionally.
  4. Pour in the coconut milk and bring the mixture to a gentle simmer. Let it cook for 15-20 minutes, or until the salmon is cooked through and the sauce has thickened.
  5. Serve the Finnish Salmon Curry over cooked rice and enjoy!
