Ingredients
- 500g salmon fillet, cut into chunks
- 4 large potatoes, peeled and diced
- 1 onion, finely chopped
- 6 cups fish or vegetable broth
- 1 cup heavy cream
- 1 bay leaf
- Salt and pepper to taste
- Fresh dill for garnish
Instructions
- In a large pot, bring the broth to a boil.
- Add the potatoes and onion, and simmer for 10 minutes.
- Add the salmon chunks and bay leaf, and simmer for an additional 10 minutes.
- Stir in the heavy cream and season with salt and pepper.
- Remove the bay leaf and serve the soup hot, garnished with fresh dill.
