Ingredients

  • 500g salmon fillet, cut into chunks
  • 4 large potatoes, peeled and diced
  • 1 onion, finely chopped
  • 6 cups fish or vegetable broth
  • 1 cup heavy cream
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh dill for garnish

Instructions

  1. In a large pot, bring the broth to a boil.
  2. Add the potatoes and onion, and simmer for 10 minutes.
  3. Add the salmon chunks and bay leaf, and simmer for an additional 10 minutes.
  4. Stir in the heavy cream and season with salt and pepper.
  5. Remove the bay leaf and serve the soup hot, garnished with fresh dill.
