Fireweed Honey Glazed Salmon Skewers

Ingredients

  • 1 lb wild Alaskan salmon, cut into 1-inch cubes
  • 1/4 cup fireweed honey
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon minced garlic
  • 1/2 teaspoon ground black pepper
  • 1 red bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 8 wooden skewers, soaked in water for 30 minutes

Instructions

  1. In a small bowl, mix the fireweed honey, soy sauce, olive oil, garlic, and black pepper to make the glaze.
  2. Thread the salmon cubes, bell pepper, and red onion onto the skewers, alternating the ingredients.
  3. Preheat the grill to medium-high heat.
  4. Brush the salmon skewers with the fireweed honey glaze.
  5. Grill the skewers for 3-4 minutes on each side, or until the salmon is cooked through and has a nice char.
  6. Brush the skewers with more glaze while grilling, if desired.
  7. Remove the skewers from the grill and let them rest for a few minutes before serving.
