Ingredients
- 1 lb wild Alaskan salmon, cut into 1-inch cubes
- 1/4 cup fireweed honey
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 teaspoon minced garlic
- 1/2 teaspoon ground black pepper
- 1 red bell pepper, cut into chunks
- 1 red onion, cut into chunks
- 8 wooden skewers, soaked in water for 30 minutes
Instructions
- In a small bowl, mix the fireweed honey, soy sauce, olive oil, garlic, and black pepper to make the glaze.
- Thread the salmon cubes, bell pepper, and red onion onto the skewers, alternating the ingredients.
- Preheat the grill to medium-high heat.
- Brush the salmon skewers with the fireweed honey glaze.
- Grill the skewers for 3-4 minutes on each side, or until the salmon is cooked through and has a nice char.
- Brush the skewers with more glaze while grilling, if desired.
- Remove the skewers from the grill and let them rest for a few minutes before serving.
