Firni (saffron-infused Milk Pudding)

Ingredients

  • 4 cups whole milk
  • 1/2 cup rice flour
  • 1/2 cup sugar
  • 1/4 teaspoon saffron threads
  • 1/4 teaspoon cardamom powder
  • 2 tablespoons chopped nuts (almonds, pistachios, etc.)

Instructions

  1. In a small bowl, soak the saffron threads in 2 tablespoons of warm milk for 10 minutes.
  2. In a heavy-bottomed pan, heat the remaining milk over medium heat.
  3. Once the milk comes to a boil, reduce the heat and stir in the rice flour, sugar, and cardamom powder.
  4. Cook the mixture on low heat, stirring constantly, until it thickens to a pudding-like consistency.
  5. Stir in the saffron-infused milk and continue to cook for another 2-3 minutes.
  6. Remove the pan from the heat and let the firni cool for a few minutes.
  7. Pour the firni into serving bowls and garnish with chopped nuts.
  8. Refrigerate the firni for at least 2 hours before serving.
