Ingredients

  • 500g white fish fillets, cut into chunks
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 red chili, finely chopped
  • 1 tbsp curry powder
  • 400ml coconut milk
  • 2 tomatoes, diced
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • Fresh coriander, for garnish

Instructions

  1. In a large pan, sauté the onion, garlic, and chili until softened.
  2. Add the curry powder and cook for 1-2 minutes until fragrant.
  3. Pour in the coconut milk and bring to a simmer.
  4. Add the fish, tomatoes, fish sauce, and brown sugar. Simmer for 10-15 minutes until the fish is cooked through.
  5. Garnish with fresh coriander before serving.
