Fish and Vegetable Jollof Rice (Riz Jollof au poisson et légumes)

Ingredients

  • 2 cups of long-grain rice
  • 1 pound of white fish fillets, such as tilapia or cod
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1 bell pepper, diced
  • 1 cup of mixed vegetables (carrots, green beans, peas)
  • 3 cups of fish or vegetable broth
  • 1/2 cup of tomato paste
  • 2 cloves of garlic, minced
  • 1 teaspoon of paprika
  • 1 teaspoon of thyme
  • 1 teaspoon of curry powder
  • Salt and pepper to taste
  • 2 tablespoons of vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the diced tomatoes, bell pepper, and mixed vegetables to the pot. Cook for 5 minutes, stirring occasionally.
  3. Stir in the tomato paste, minced garlic, paprika, thyme, curry powder, salt, and pepper. Cook for another 2 minutes.
  4. Add the fish fillets to the pot and pour in the fish or vegetable broth. Bring to a simmer and cook for 10 minutes.
  5. Stir in the rice, making sure it is evenly distributed in the pot. Cover and cook for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
  6. Once the rice is cooked, fluff it with a fork and gently mix in the fish and vegetables. Adjust seasoning if needed.
  7. Serve the Fish and Vegetable Jollof Rice hot, garnished with fresh herbs if desired.
