Fish and Vegetable Jollof Rice (Riz Jollof au poisson et légumes)
Riz Jollof au poisson et légumes, or Fish and Vegetable Jollof Rice, is a popular dish in Congolese cuisine. This flavorful one-pot meal is made with rice, fish, and a variety of vegetables, cooked in a rich tomato-based sauce.
Ingredients
- 2 cups of long-grain rice
- 1 pound of white fish fillets, such as tilapia or cod
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1 bell pepper, diced
- 1 cup of mixed vegetables (carrots, green beans, peas)
- 3 cups of fish or vegetable broth
- 1/2 cup of tomato paste
- 2 cloves of garlic, minced
- 1 teaspoon of paprika
- 1 teaspoon of thyme
- 1 teaspoon of curry powder
- Salt and pepper to taste
- 2 tablespoons of vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the diced tomatoes, bell pepper, and mixed vegetables to the pot. Cook for 5 minutes, stirring occasionally.
- Stir in the tomato paste, minced garlic, paprika, thyme, curry powder, salt, and pepper. Cook for another 2 minutes.
- Add the fish fillets to the pot and pour in the fish or vegetable broth. Bring to a simmer and cook for 10 minutes.
- Stir in the rice, making sure it is evenly distributed in the pot. Cover and cook for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
- Once the rice is cooked, fluff it with a fork and gently mix in the fish and vegetables. Adjust seasoning if needed.
- Serve the Fish and Vegetable Jollof Rice hot, garnished with fresh herbs if desired.
