Ingredients
- 4 fillets of white fish (such as tilapia or cod)
- 1 onion, diced
- 1 bell pepper, diced
- 2 tomatoes, diced
- 3 garlic cloves, minced
- 1/4 cup cilantro, chopped
- 1 teaspoon oregano
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 2 tablespoons olive oil
- 1/2 cup chicken or vegetable broth
- 1 tablespoon tomato paste
- 1 tablespoon lime juice
Instructions
- Season the fish fillets with salt and pepper.
- In a large skillet, heat the olive oil over medium heat.
- Add the onion, bell pepper, and garlic. Cook until the vegetables are softened.
- Stir in the tomatoes, oregano, paprika, cumin, and cilantro. Cook for 5 minutes.
- Add the chicken or vegetable broth, tomato paste, and lime juice. Simmer for 10 minutes.
- Add the fish fillets to the skillet and spoon the sauce over them. Cover and cook for 8-10 minutes, or until the fish is cooked through.
- Serve the fish creole hot, garnished with additional cilantro if desired.
