Ingredients
- 1 lb white fish fillets, cut into chunks
- 2 tbsp curry powder
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp ginger, grated
- 1 scotch bonnet pepper, chopped
- 1 cup coconut milk
- 2 tomatoes, diced
- 1 cup water
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium heat.
- Add the curry powder and cook for 1 minute, stirring constantly.
- Add the onion, garlic, ginger, and scotch bonnet pepper. Cook until the onions are soft.
- Add the coconut milk, tomatoes, and water. Bring to a simmer.
- Add the fish chunks and simmer for 10-15 minutes, or until the fish is cooked through.
- Season with salt and pepper to taste.
- Serve hot with rice or roti.
