Fish Curry Fiesta

Ingredients

  • 1 lb white fish fillets, cut into chunks
  • 2 tbsp curry powder
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 scotch bonnet pepper, chopped
  • 1 cup coconut milk
  • 2 tomatoes, diced
  • 1 cup water
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat.
  2. Add the curry powder and cook for 1 minute, stirring constantly.
  3. Add the onion, garlic, ginger, and scotch bonnet pepper. Cook until the onions are soft.
  4. Add the coconut milk, tomatoes, and water. Bring to a simmer.
  5. Add the fish chunks and simmer for 10-15 minutes, or until the fish is cooked through.
  6. Season with salt and pepper to taste.
  7. Serve hot with rice or roti.
