Fish Curry with Chitol Fish (Chitol Maacher Kalia) is a traditional dish from Sylheti Cuisine, known for its rich and flavorful curry. This recipe combines the unique taste of Chitol fish with aromatic spices to create a delicious and satisfying dish.
Ingredients
- 500g Chitol fish, cut into pieces
- 2 onions, finely chopped
- 1 tablespoon ginger paste
- 1 tablespoon garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 2 tomatoes, chopped
- 4 green chilies, slit
- 1/2 cup mustard oil
- Salt to taste
- 2 cups water
Instructions
- Marinate the Chitol fish pieces with turmeric powder and salt. Set aside for 15 minutes.
- Heat mustard oil in a pan and fry the fish pieces until golden brown. Remove and set aside.
- In the same pan, add more oil if needed and sauté the chopped onions until golden brown.
- Add ginger paste, garlic paste, turmeric powder, red chili powder, cumin powder, and coriander powder. Cook for a few minutes.
- Add the chopped tomatoes and cook until they turn mushy.
- Pour in water and bring the curry to a simmer.
- Gently slide in the fried fish pieces and green chilies. Cover and cook for 10-15 minutes.
- Adjust the seasoning and consistency of the curry, then serve hot with steamed rice.
