Ingredients

  • 1 lb white fish fillets
  • 1 cup all-purpose flour
  • 1 cup white vinegar
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste

Instructions

  1. Season the fish fillets with salt and pepper, then coat them in flour.
  2. In a large skillet, heat the olive oil over medium heat. Fry the fish fillets until golden brown, then remove and set aside.
  3. In the same skillet, sauté the bell pepper, onion, and garlic until they begin to soften.
  4. Pour in the white vinegar and add the oregano, cumin, salt, and pepper. Allow the mixture to simmer for 5 minutes.
  5. Place the fried fish fillets in a shallow dish and pour the vinegar mixture over them. Let the fish marinate in the escabeche sauce for at least 1 hour before serving.
