Fish Pie With Sweet Potato Topping

Ingredients

  • 500g white fish fillets, such as cod or haddock
  • 2 large sweet potatoes, peeled and diced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 1 cup fish or vegetable stock
  • 1/2 cup coconut milk
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Boil the sweet potatoes in a pot of water until tender, then mash them with coconut milk and season with salt and pepper. Set aside.
  3. In a separate pan, sauté the onion and garlic in butter until softened.
  4. Sprinkle the flour over the onion and garlic, then gradually stir in the stock to make a smooth sauce.
  5. Add the fish fillets, peas, and thyme to the pan, and simmer for 5 minutes until the fish is cooked through.
  6. Transfer the fish mixture to a baking dish and spread the mashed sweet potatoes on top.
  7. Bake in the preheated oven for 20-25 minutes, or until the sweet potato topping is golden and the filling is bubbling.
