Ingredients
- 500g white fish fillets, such as cod or haddock
- 2 large sweet potatoes, peeled and diced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup frozen peas
- 1 cup fish or vegetable stock
- 1/2 cup coconut milk
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Preheat the oven to 200°C (400°F).
- Boil the sweet potatoes in a pot of water until tender, then mash them with coconut milk and season with salt and pepper. Set aside.
- In a separate pan, sauté the onion and garlic in butter until softened.
- Sprinkle the flour over the onion and garlic, then gradually stir in the stock to make a smooth sauce.
- Add the fish fillets, peas, and thyme to the pan, and simmer for 5 minutes until the fish is cooked through.
- Transfer the fish mixture to a baking dish and spread the mashed sweet potatoes on top.
- Bake in the preheated oven for 20-25 minutes, or until the sweet potato topping is golden and the filling is bubbling.
