Ingredients
- 1 lb mixed seafood (such as shrimp, mussels, and squid)
- 1 onion, finely chopped
- 2 tomatoes, grated
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 1 cup short-grain rice
- 4 cups fish or seafood broth
- 1/2 teaspoon saffron threads
- Salt and pepper to taste
- Olive oil
Instructions
- Heat olive oil in a large paella pan or wide skillet over medium heat.
- Add the chopped onion, grated tomatoes, minced garlic, and diced bell pepper. Cook until the vegetables are softened.
- Add the mixed seafood to the pan and cook for a few minutes until they start to turn opaque.
- Stir in the rice and saffron threads, then pour in the fish or seafood broth.
- Season with salt and pepper, then bring the mixture to a boil. Reduce the heat and let it simmer for about 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let the rice rest for a few minutes before serving.
