Ingredients

  • 1 lb mixed seafood (such as shrimp, mussels, and squid)
  • 1 onion, finely chopped
  • 2 tomatoes, grated
  • 2 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 cup short-grain rice
  • 4 cups fish or seafood broth
  • 1/2 teaspoon saffron threads
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large paella pan or wide skillet over medium heat.
  2. Add the chopped onion, grated tomatoes, minced garlic, and diced bell pepper. Cook until the vegetables are softened.
  3. Add the mixed seafood to the pan and cook for a few minutes until they start to turn opaque.
  4. Stir in the rice and saffron threads, then pour in the fish or seafood broth.
  5. Season with salt and pepper, then bring the mixture to a boil. Reduce the heat and let it simmer for about 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
  6. Remove from heat and let the rice rest for a few minutes before serving.
