Ingredients
- 2 lbs fresh fish fillets, cut into chunks
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tomatoes, diced
- 1 bell pepper, chopped
- 2 carrots, sliced
- 2 potatoes, diced
- 4 cups fish or vegetable broth
- 1 cup coconut milk
- 2 tbsp fresh cilantro, chopped
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion and garlic until softened.
- Add the tomatoes, bell pepper, carrots, and potatoes. Cook for 5 minutes.
- Pour in the fish or vegetable broth and bring to a simmer.
- Add the fish chunks and coconut milk. Simmer for 15-20 minutes until the fish is cooked through.
- Stir in the cilantro, cumin, paprika, salt, and pepper. Simmer for an additional 5 minutes.
- Adjust seasoning to taste and serve hot.
