Ingredients
- 1 lb (450g) white fish fillets, such as cod or haddock
- 1 onion, finely chopped
- 2 carrots, diced
- 2 potatoes, peeled and cubed
- 1 bell pepper, diced
- 3 tomatoes, chopped
- 4 cups fish or vegetable broth
- 1/4 cup white vinegar
- 1/4 cup fresh dill, chopped
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion, carrots, and bell pepper until softened.
- Add the potatoes, tomatoes, and broth to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add the fish fillets and vinegar to the pot. Simmer for an additional 10-15 minutes, or until the fish is cooked through.
- Stir in the fresh dill and season with salt and pepper to taste.
