Ingredients
- 1 lb mixed fish fillets (such as snapper, grouper, or mahi-mahi), cut into chunks
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 hot pepper, sliced (optional for heat)
- 2 sprigs fresh thyme
- 2 bay leaves
- 4 cups fish or vegetable broth
- 1 cup coconut milk
- 2 tbsp lime juice
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion, garlic, bell pepper, and hot pepper in some oil until softened.
- Add the tomatoes, thyme, and bay leaves, and cook for a few minutes until the tomatoes break down.
- Pour in the fish or vegetable broth and bring to a simmer.
- Add the fish fillets and simmer for about 15-20 minutes until the fish is cooked through.
- Stir in the coconut milk and lime juice, and season with salt and pepper to taste.
- Simmer for another 5 minutes to allow the flavors to meld together.
- Remove the thyme sprigs and bay leaves before serving.
