Ingredients
- 1 lb white fish fillets, such as tilapia or cod
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 garlic cloves, minced
- 1 bell pepper, chopped
- 1 carrot, sliced
- 1/2 cup fresh parsley, chopped
- 6 cups fish or vegetable broth
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, and bell pepper. Sauté for 3-4 minutes until the vegetables are softened.
- Add the diced tomatoes and sliced carrots to the pot. Cook for another 5 minutes, stirring occasionally.
- Pour in the fish or vegetable broth and bring the soup to a gentle boil.
- Reduce the heat to low and add the fish fillets to the pot. Simmer for 15-20 minutes until the fish is cooked through.
- Stir in the chopped parsley and season the soup with salt and pepper to taste.
- Remove the pot from the heat and let the soup rest for a few minutes before serving.
