Ingredients

  • 1 lb white fish fillets, cut into chunks
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 tomatoes, chopped
  • 1 cup coconut milk
  • 3 cups fish or vegetable broth
  • 2 tbsp fresh cilantro, chopped
  • 1 scotch bonnet pepper, whole
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onion, garlic, and bell pepper until softened.
  2. Add the tomatoes and cook for a few minutes until they start to break down.
  3. Pour in the coconut milk and fish or vegetable broth. Bring to a simmer.
  4. Add the fish chunks, whole scotch bonnet pepper, and cilantro. Simmer for 15-20 minutes until the fish is cooked through.
  5. Season with salt and pepper to taste.
  6. Remove the scotch bonnet pepper before serving.
