  • 1 fennel bulb, sliced
  • 1 can (14 oz) diced tomatoes
  • 4 cups fish or seafood broth
  • 1/2 cup dry white wine
  • 2 tbsp olive oil
  • 1 tsp saffron threads
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 baguette, sliced and toasted (for serving)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, sliced fennel, and minced garlic. Cook until the vegetables are softened, about 5 minutes.
  2. Pour in the white wine and let it simmer for 2 minutes to reduce slightly.
  3. Add the diced tomatoes, fish or seafood broth, saffron threads, and bay leaves to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.
  4. Gently add the mixed fish fillets and shellfish to the pot. Cover and cook for an additional 10-15 minutes, or until the fish is cooked through and the shellfish have opened.
  5. Season the stew with salt and pepper to taste. Discard any unopened shellfish.
  6. Serve the fish stew hot, accompanied by toasted baguette slices.
