Ingredients
- 1 lb mixed fish fillets (such as cod, halibut, or snapper)
- 1 lb mixed shellfish (such as shrimp, mussels, or clams)
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 fennel bulb, sliced
- 1 can (14 oz) diced tomatoes
- 4 cups fish or seafood broth
- 1/2 cup dry white wine
- 2 tbsp olive oil
- 1 tsp saffron threads
- 2 bay leaves
- Salt and pepper to taste
- 1 baguette, sliced and toasted (for serving)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, sliced fennel, and minced garlic. Cook until the vegetables are softened, about 5 minutes.
- Pour in the white wine and let it simmer for 2 minutes to reduce slightly.
- Add the diced tomatoes, fish or seafood broth, saffron threads, and bay leaves to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.
- Gently add the mixed fish fillets and shellfish to the pot. Cover and cook for an additional 10-15 minutes, or until the fish is cooked through and the shellfish have opened.
- Season the stew with salt and pepper to taste. Discard any unopened shellfish.
- Serve the fish stew hot, accompanied by toasted baguette slices.
