Ingredients

  • 1 lb firm white fish fillets, such as cod or halibut
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 2 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 cup fish or vegetable broth
  • 1/2 cup white wine
  • 1/4 cup olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion, garlic, and red bell pepper. Cook until the vegetables are softened, about 5 minutes.
  2. Add the diced tomatoes, paprika, and a pinch of salt. Cook for another 5 minutes, stirring occasionally.
  3. Pour in the white wine and let it simmer for 2-3 minutes to reduce slightly.
  4. Add the fish broth and bring the mixture to a gentle boil.
