Fishguard Fish Tagine

Ingredients

  • 500g mixed fish fillets (such as cod, haddock, and salmon), cut into chunks
  • 2 onions, finely chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 400g canned chopped tomatoes
  • 200ml fish stock
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp smoked paprika
  • 1/2 tsp ground turmeric
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • Fresh cilantro leaves for garnish

Instructions

  1. In a tagine or large skillet, heat some olive oil over medium heat.
  2. Add the onions and garlic, and sauté until softened.
  3. Add the bell peppers and continue to cook for a few minutes.
  4. Stir in the chopped tomatoes, fish stock, and all the spices. Season with salt and pepper.
  5. Bring the mixture to a simmer, then gently add the fish chunks.
  6. Cover and let the tagine simmer for about 20-25 minutes, or until the fish is cooked through.
  7. Once done, garnish with fresh cilantro leaves and serve hot.
