Ingredients
- 500g mixed fish fillets (such as cod, haddock, and salmon), cut into chunks
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 400g canned chopped tomatoes
- 200ml fish stock
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp smoked paprika
- 1/2 tsp ground turmeric
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- Fresh cilantro leaves for garnish
Instructions
- In a tagine or large skillet, heat some olive oil over medium heat.
- Add the onions and garlic, and sauté until softened.
- Add the bell peppers and continue to cook for a few minutes.
- Stir in the chopped tomatoes, fish stock, and all the spices. Season with salt and pepper.
- Bring the mixture to a simmer, then gently add the fish chunks.
- Cover and let the tagine simmer for about 20-25 minutes, or until the fish is cooked through.
- Once done, garnish with fresh cilantro leaves and serve hot.
