Ingredients
- 4 large bell peppers
- 1 lb fresh white fish fillets, such as cod or haddock
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup cooked rice
- 1/4 cup chopped fresh parsley
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, mix together the fish, onion, garlic, cooked rice, parsley, Parmesan cheese, salt, and pepper.
- Stuff the fish mixture into the prepared bell peppers.
- Place the stuffed peppers in a baking dish, drizzle with olive oil, and cover with foil.
- Bake for 25 minutes, then uncover and bake for an additional 5 minutes until the peppers are tender and the fish is cooked through.
