Ingredients

  • 4 large bell peppers
  • 1 lb fresh white fish fillets, such as cod or haddock
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup cooked rice
  • 1/4 cup chopped fresh parsley
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, mix together the fish, onion, garlic, cooked rice, parsley, Parmesan cheese, salt, and pepper.
  4. Stuff the fish mixture into the prepared bell peppers.
  5. Place the stuffed peppers in a baking dish, drizzle with olive oil, and cover with foil.
  6. Bake for 25 minutes, then uncover and bake for an additional 5 minutes until the peppers are tender and the fish is cooked through.
  7. Serve the Fiskafylltar Paprikur hot, garnished with additional parsley if desired.
