Ingredients

  • 1 lb (450g) white fish fillets, such as cod or haddock
  • 1 lb (450g) potatoes, peeled and diced
  • 1 onion, finely chopped
  • 2 eggs, beaten
  • 1/4 cup (30g) all-purpose flour
  • 1/4 cup (60ml) milk
  • 1/4 cup (60g) butter
  • Salt and pepper to taste
  • 1 cup (120g) breadcrumbs
  • Vegetable oil for frying

Instructions

  1. Boil the potatoes in a large pot of salted water until tender. Drain and mash them with the butter and milk. Set aside to cool.
  2. In a separate pot, poach the fish fillets in simmering water for 5-7 minutes until cooked through. Drain and flake the fish into small pieces.
  3. In a large bowl, combine the mashed potatoes, flaked fish, chopped onion, beaten eggs, and flour. Season with salt and pepper, then mix until well combined.
  4. Shape the mixture into small croquettes, then coat each croquette in breadcrumbs.
  5. Heat the vegetable oil in a large skillet over medium heat. Fry the croquettes in batches until golden brown and crispy, about 3-4 minutes per side.
  6. Remove the croquettes from the skillet and drain on paper towels. Serve hot and enjoy!
