Fiskapai (faroese Fish Pie)
Fiskapai, or Faroese Fish Pie, is a traditional dish from the Faroe Islands that features layers of fish, potatoes, and onions, all baked together in a creamy sauce. This hearty and comforting pie is a staple in Faroese cuisine and is perfect for a cozy family dinner.
Ingredients
- 500g white fish fillets, such as cod or haddock
- 1kg potatoes, peeled and thinly sliced
- 2 onions, thinly sliced
- 50g butter
- 50g all-purpose flour
- 500ml milk
- Salt and pepper to taste
Instructions
- Preheat the oven to 180°C (350°F).
- Layer half of the sliced potatoes in the bottom of a greased baking dish.
- Place the fish fillets on top of the potatoes, then add a layer of sliced onions.
- Top with the remaining sliced potatoes.
- In a saucepan, melt the butter over medium heat. Stir in the flour to make a roux.
- Gradually whisk in the milk until the sauce is smooth and thickened. Season with salt and pepper.
- Pour the sauce over the layered ingredients in the baking dish.
- Cover the dish with foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the top is golden brown and the potatoes are tender.
- Serve the Fiskapai hot, with a side of steamed vegetables or a fresh salad.
