Fiskapotetgratin (faroese Fish And Potato Gratin)

Ingredients

  • 500g white fish fillets, such as cod or haddock
  • 1kg potatoes, peeled and thinly sliced
  • 1 onion, thinly sliced
  • 200ml heavy cream
  • 200ml fish or vegetable stock
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Butter a baking dish and arrange a layer of sliced potatoes on the bottom.
  3. Season the fish fillets with salt and pepper, then place them on top of the potatoes.
  4. Layer the sliced onions over the fish.
  5. Add another layer of sliced potatoes on top of the onions.
  6. In a saucepan, heat the cream and stock until warm. Pour this mixture over the potatoes in the baking dish.
  7. Dot the top with butter and cover the dish with foil.
  8. Bake for 45 minutes, then remove the foil and bake for an additional 15 minutes or until the top is golden and the potatoes are tender.
  9. Serve hot and enjoy!
