Ingredients
- 500g white fish fillets, such as cod or haddock
- 3 large potatoes, peeled and diced
- 1 onion, finely chopped
- 2 carrots, diced
- 1 leek, sliced
- 1 liter fish or vegetable stock
- 250ml heavy cream
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onion, carrots, and leek. Cook for 5 minutes until softened.
- Add the diced potatoes and fish stock to the pot. Bring to a boil, then reduce the heat and simmer for 15 minutes until the potatoes are tender.
- Add the fish fillets to the pot and cook for an additional 5-7 minutes until the fish is cooked through.
- Pour in the heavy cream and stir gently to combine. Season with salt and pepper to taste.
- Serve the Fiskasoppa hot, garnished with fresh herbs if desired.
